Instructions
1: Grate the lauki and mix with ajwain, green chillies, ginger, haldi powder, coriander powder, red chilli powder, garam masala, chopped coriander, besan, and salt to form a dough. 2: Shape the mixture into small balls (koftas) and fry them in hot oil until golden. 3: For the gravy, heat mustard oil and add hing, jeera, and sauf. 4: Add chopped raw potato followed by methi dana, ajwain, and spices like coriander powder, kashmiri red chilli powder, haldi powder, and salt. 5: Pour in warm water, mix well, and let it simmer. 6: Add kasuri methi, amchoor powder, garam masala, green chillies, and ginger juliennes to the gravy. 7: Finally, add the fried koftas into the gravy, stir gently, and cook for a few minutes before serving.View original recipe
