Instructions
1: Prepare the dough by mixing atta, methi, besan, salt, haldi powder, red chilli powder, roasted cumin powder, ajwain, and water as needed. 2: Let the dough rest for about 15 minutes. 3: Boil and mash the potatoes, then mix with coriander leaves, onion, ginger, green chillies, coriander powder, red chilli powder, roasted jeera powder, amchur powder, ajwain, and salt for the stuffing. 4: Divide the dough into small balls and roll out each ball into a flat circle. 5: Place some potato stuffing in the center of the rolled dough and fold to seal it. 6: Roll out again gently to flatten the stuffed dough. 7: Heat a pan and cook the paratha using desi ghee until both sides are golden brown. 8: Serve hot with yogurt or pickle.View original recipe
