1: For the dough, mix Maida, oil, salt, Ajwain, and water to form a smooth dough. 2: For the stuffing, heat oil and add Hing, Jeera, and Coriander Seeds. 3: Add Peas, chopped Green Chillies, grated Ginger, Haldi Powder, Red Chilli Powder, Coriander Powder, and boiled, mashed Potatoes. 4: Season with salt, black salt, Garam Masala, Amchoor Powder, and Black Pepper Powder. Mix well. 5: Roll out the dough, cut into circles, fill with stuffing, and shape into samosas. 6: Deep fry samosas until golden brown. Serve hot.
